A barback is a go-fer. Fills coolers with beer, keeps mixing stations full (chopped lemons, limes, onions, etc), brings up full bottles of booze from the storeroom, brings up ice from the ice maker. It is not glamorous, by any means but if you want to be a bartender it is a good place to start.
