What is the best way to deal with an angry customer who had waited to long for food service?

I'm trying to get a waiter job and the interviewers always ask tell me a problem and how you solved it...Can someone tell me a few good answers to this question that I can use on my job interview?

Along with your apology, you state that kitchen had run out of and a fresh batch was made up. Or you offer them a free desert to compensate.

Keep the drink glasses full, maintain a professional compsure and keep them up to date on the progress of their order. Do NOT take the customers side!!! Do nothing that might get you fired afterwards.

It depends on the power the management gives you as a server. I use to empower my employees so they would give you a drink or a appetizer. If it was really late we would comp the meal.
