How do I prepare myself for a unemployment appeal hearing?

I was fired in December of 2007 after only 1 year as a Personal Assistant to my former employer. She had issues with me, was jealous and did everything possible for me to quit. Well, she noticed I would not quit and that's when she fired me. I was granted unemployment and now she is appealing it with many false statements. What can I do to win this case? Have information with you to support yourself and what took place. Do you have any notes of conversations you had with her or incidents that took place? You simply tell the truth. At the end of the day, it shouldn't really matter to you. The unemployment gathered its facts and determined that you were entitled to benefits.
