Look, green beans are a low-acid food so you only have two options: either blanch and freeze, or process them in pressure canner. A water bath canner won't do the job because it will only reach a temperature 212ºF, and you must have 240ºF to 250ºF -- depending on where you live, water boils at a lower temperature at... More

Maybe just blanch them, then add them with warm liquid (water) and then finish them in the water bath so they don;t get over cooked and mushy. May as well try it once and see how they do. Then you will for next time what to adjust. I'm scared of pressure cookers too. Never even used one I'm so scared.

Pressure cookers and pressure canners can be two different things. Pressure cookers have less metal, are smaller in diameter, and will use less water than pressure canners. The result is that the come-up and come-down times will be less than for the standard pressure canner. Make sure you use a pressure canner, NOT a... More

They're suppose to be processed under pressure in order to kill all bacteria including botulinum spores. I scald mine 3 minutes, cool, put in freezer bags & put in the freezer. They've always turned out real good. You can make dilled green beans or pickled 3 bean salad & process in just a water bath.
