can I put cooked green beans in a jar and finish them in the water bath?

I know in order to can green beans you need to pressure cook them. I was wondering if I cook them first can I just do the water bath b/c I am scared of the pressure cooker.

Look, green beans are a low-acid food so you only have two options: either blanch and freeze, or process them in pressure canner. Maybe just blanch them, then add them with warm liquid (water) and then finish them in the water bath so they don;t get over cooked and mushy. May as well try it once and see how they do. Then you will for next time what to adjust. I'm scared of pressure cookers too. Never even used one I'm so scared.

Pressure cookers and pressure canners can be two different things. Pressure cookers have less metal, are smaller in diameter, and will use less water than pressure canners. They're suppose to be processed under pressure in order to kill all bacteria including botulinum spores. I scald mine 3 minutes, cool, put in freezer bags & put in the freezer. They've always turned out real good. You can make dilled green beans or pickled 3 bean salad & process in just a water bath.

foods with acid can be wayer bathed, foods without acid have to be pressure cooked. i agree with others on here-freeze them.

I pressure can most of my green beans....but a few batches I freeze. with your fresh beans figure out if you want to snap your beans or french slice them...give the ready beans a water bath and have a good pot of boiling water ready....boil 5 minutes for snapped (cut) beans, 3 minutes for french sliced beans...
