what are the responsibilities of a prep cook?

If you are a prep cook in a restaurant what do you do, besides the obvious "prep food." Can someone please give me a little more detail into their job?

Prep cook usually cuts and prepare basics, i.e. cut veggies for salads or recipes, make sure to have the right utensils etc... but most times he gets to clean dishes, benches and floors.

You may also have to restock the line as needed during the rushes and it is important the new stuff goes behind the old stuff. Most big places will have you put "date dots" on everything you make...
