What's the protocol for this?

If I was to sign a contract to work for GKN (a defense aerospace company) and the next day my dream company, Aerospace Corporation, calls me with a job offer, what's the protocol for quitting at GKN? Am I even allowed to? Unfortunately Steven is right in that I will acquire a reputation, and probably a bad one. However, dusty_titus, it would not a be lie to say that AC trumps GKN in every way be it access to classified DoD projects, location, job description and responsibilities. Short of GKN offering me a management/senior position, AC tops them in everything I'm looking for.

READ the contract. Whatever IT says about quitting determines the rules. Even assuming you can get out free and clear, this is VERY BAD form. You WILL acquire a reputation that will work against you in any future job searches... More

You should get so lucky, but on the slim chance that may happen, here's' what you do - you call GKN and explain that you had previously applied for a job with AC and their officer in charge of hiring for a special department just back into town, and offered you a job.
