I attended Motorcycle mechanic's institute. They have schools in Florida and Arizona. It is a good place to learn to be an entry level tech.

Rod is spot on with his answer, you will learn more by following his advice than any books will ever teach you. A course is also a good way forward, but there is no substitute for getting your hands dirty. Been there dun that and been servicing my own bikes for 40 plus years.
