Quality control aspects can be applied to a lot of different functionality depending on whether you have enough data or an ability to estimate the data well and create a constructive population of data. Can you use a fictionalized company or is this a real project? Consider these ideas to spur your thinking although they may not be the perfect solution...

How many of your company printing projects fail vs succeed in terms of optimal performance? What is the deviation, how can the outcome be controlled? Perhaps there are several reasons for failure and you can rank them. Is there a way to achieve a better outcome?
Six Sigma is largely used to measure a process and measure/control the variables within the process. Largely this is used to measure production outcomes.
Some other processes are about customer service, marketing/selling, procurement and competitive strategies, product performances if observable. Maybe some other areas supply more data or interest and ways to improve the process of these activities.
Some projects that may use Six Sigma are related to developing a product, software or controlling and measuring a long term project or process.

Some processes within a company might be a good project for process improvement methods: but will Six Sigma work? Looking for improvement in Backlogue of orders, bottleneck, poor quality decisions, wasted time and effort, waste in general.
Marketing
How is business attracted to your company? Types of advertising and how many customers derived. Using your market share estimation, success vs. failure in the circulation vs the advertising outcomes. Is your advertising aimed at the right focus group?
Selling:
What is your customer base? What types of customers purchase the most printing? What is the mean and the mode, who should you be selling to? 80/20 rule. Does your customer service help you to gain or lose customers? Are there bottlenecks in delivery systems causing you to be late on order?
Other aspects of business you can measure:
Procurement Strategies:
Vendor quality and Vendor dominance in your database, who do you buy from? Does market data suggest that there may be better pricing or vendor performance available? Deviations and ranking on delivery, quality, and other variables.
Product Performance:
Customer Satisfaction
Competitors rankings and outcomes compared to yours if available
i.e. internet statistics on franchise competition, etc.
Use Product Performance:
Ink and other equipment, supplies are expensive? Do you get the best price on an important purchased item, measure variables required including price. How is the procurement process and strategy working to obtain good results?
An area ripe for Six Sigma is the manpower and cost of performing these activities as well as Revenue, Cost and other KPI's. Are these activities efficient? Are these activities effective? Can the process be streamlined?
Project should interest you:
All of these types of analysis are aimed at improving the performance of the company. What interests you? You will do a good job if you find a good fit.
Perhaps you like football. There is a raft of data and statistics available on players and teams. One study I saw done compared the times the QB ran the ball vs. a passing game. What were the outcomes, highest ?f wins? Quality control may be in measuring the performance of the Super Bowl Teams, looking at strategy and ranking and assessing the best performance outcome over their history if such data is available. What process do they use to recruit players? Does it work better than the competition? Where do they waste effort and do they encounter more injuries in using certain game strategies?
You may be able to apply this thinking to a sport you participate in or in a team effort in another area where you can get good info, like college or high school, clubs or organizations.
A good base of information may be a good choice to find a project?
The first person who answered suggested you take an informal survey the older employees. If possible to take a survey you can gain a population of interesting data from a good format. Include your survey in your project.
