How do I write a separation letter from my job?
I'm wanting to quit my job to be able to stay at home with my small children, my job has no idea that i'm wanting to quit. How should I write a letter and what should I put in it? Thanks in advance!

No need to write a letter. Sit down with your boss and say "I want to spend time to take care of my children. I'm going to have to resign from my position here."

Just state your reasons why you want to leave the place. Should be a short note and to the point. For example you can put in the letter how the hours of operation is conflicting with you spending time with your family.

writing a letter may sound good, but if you do it in person and are honest, the company will remember these in case you ever need to reapply for the job you are letting go of, also can you do work from home maybe part time for them, can you come in and work if need to on part time or emergency basis, take to your boss... Just tell your boss the reason why you cannot continue with your job.
