What exactly does a chemical engineer do?

I have a general understanding of a chemical engineer's role. Correct me if I am wrong, but chemical engineers apply scientific principles to develop process related to the production of materials. Could someone please give me a specific example of what this entails? What kinds of materials do chemical engineers produce and what basic scientific principles apply? I am interested in an engineering undergrad, but I'm not sure which field of engineer is best for me. I love math and chemistry, but I don't find physics very interesting.
