Hardwood Floor Finishes that do not darken the wood?
Specifically that do not darken the wood at time of install, not over time. I want to keep my unfinished white oak as light as possible. More toxic probably, but I really want to keep the floor as light as possible, but still bring out some grain.

Use a quality latex polyurethane finish. This will not not darken or yellow over time. This will maintain the original appearance for years.
