Best place to live down south?

I was born and raised up in Connecticut, but I've visited the south numerous times, from Texas to North Carolina to Georgia and a few places in between, and I've loved every place that I've been to. San Antonio was my favorite southern city but it's too much of a military city. I'm looking for a town that's close enough to the city to go to on weekends, but enough in the country where it would be quiet and where I can enjoy the long country roads and hunting and fishing and hiking, because I'm very outdoorsy. I know I have a lot of research to do, and I'd have to find a job in either medical or firefighting wherever I move to, but if anyone knows of any towns worth me checking out, that would really help!
