question about a/c industry?

I've been in the hvac industry for a little over 3 years. It's been mostly rough. In that time, I've had 3 jobs. The first for 9 months then laid off as helper, second 7 months, then laid off as helper, 3rd job worked for a very small company just owner and me. He is plagued with illnesses and so work was sporadic depending on when he felt up to working. By now, I was a 3rd yr helper. He told me I had learned a great deal in the year plus, I worked for him. I would have stayed with him but hours even in the height of the season were less than 30 and I really need a full time job. So, now, I applied for and was hired for another company in NYC. Been there a few days...no complaints but was promised full time and of course, today, not working. Is this just the nature of the trade? I'm gettin' nervous. Job is mostly commercial.- new construction Would they decide against me in 3 days? I am a hard worker and that's what they said they were looking for even if I didn't have a lot of experience.
