How to do an interview properly?

Recently for the holidays I have had four job interviews, each all terribly done. I prepare, and go over what i say (Hell i even write it down and re-read it) but it seems like it never works. The last interview i had was at Chuck e Cheese and before the lady even asked me anything she said that I seemed really shy. I have really bad social anxiety and i already have to overcome some of my biggest fears just to complete the interview so you can imagine how i feel when i find out i didn't get the job. I would like to know what i could do to fix this? I'm 19 now and haven't had a job (Aside from an internship in high school, but that doesn't count). To make matters worse i live in San Diego, and it seems as though jobs are scarce as HELL. For #$%^ sake it's the holidays, I'm getting really irritated at this point and should have a job by now. I know my attitude looks poor on here but can you blame me? I would also like to know how I should send a thank you letter to the person who interviewed me because it looks good on your part. I know how to write it and address it, but do i bring it to the interview before hand....? Or do i walk in the next day and ask for the person who interviewed me and hand it to them? Why do they say on interview tip websites to give them a thank you letter and not tell you when or where to give it? I'm really confused. Anyone with some advice that can help would be GREATLY APPRECIATED.
