What is a good amount of acreage to build a house on?

My husband and I are saving up (just married!) to buy a lot to build on. He's a contractor, and every home we've looked at just wasn't quite "it". So we're going to build instead. We're looking for a lot that would be a good size to build a house, a small barn/stable for horses and goats, a chicken coop, and still have land enough for a veggie garden (average size) and lots of room for kids to play once we have them. I found an amazing lot that was 0.6 acres, but it does not look big enough for... anything.

Horses, goats, chickens, veggies, and kids? You'll need two or three acres at least. You could maybe make do with just one, but everyone would wind up feeling crowded.
