How much money is an acceptable amount to make your first year out of college?
I am applying for an administrative assistant job where I would make about $23,500 a year. Is this an embarrassing job to accept for a college graduate? Or am I making the right move by taking an entry level job where I get some experience and contacts?

It would depend on what your undergraduate degree was in. An engineer might expect to start at close to 40,000 dollars a year while an English literature major would probably make in the low 20s.
