I finally figured out what I want to do, but I don't know where to go from here?

In three months, I will be graduating with a bachelors degree in psychology. For the first two years of school, I was convinced I wanted to become either a research/experimental psychologists or a counseling psychologist. But about a year and a half ago I realized that is not at all what I want to do, but it was too late to switch my major, as I had already had a significant amount of psychology credits completed. My real passions lie in writing, reading, planning, and organizing. My dream careers are: technical writer, editor, event coordinator, or wedding planner. The only related things I have on my resume are a few publications in my university's journal of literature and art, and a semester of working with the university's newspaper. I've also done some volunteering where I helped organize an event but that's the extent of it. I can't go back in time and change my degree. Also graduate school is not an option at this point, as I am financially independent of my parents and can certainly not afford it, nor do I even want to continue my education at this point. So can anyone help? Thanks RoaringMice, thank you so much for your answer. Very informative and helpful, I greatly appreciate it.
